Romesco Sandwich

Ingredients

  • 1 pc. Ciabatta square bread
  • 2 oz. Broccolini
  • 2 oz. Red onion
  • 2 oz. Eggplant
  • Olive oil
  • Salt + pepper
  • 1 oz. Creamy Romesco

Preparation

  1. Peel the red onion and cut into wedges.
  2. Cut the eggplant into 1/3" round slices.
  3. Season the broccolini, red onion wedges and eggplant with olive oil, salt and pepper to taste.
  4. Grill all vegetables until tender.
  5. Cut the ciabatta bread in half, spread the creamy romesco on both sides
  6. Arrange the grilled vegetables on top of the bread starting with the eggplant, then red onion and broccolini.
