Creamy Romesco
Preparation
- Peel the red onion and cut into wedges.
- Cut the eggplant into 1/3" round slices.
- Season the broccolini, red onion wedges and eggplant with olive oil, salt and pepper to taste.
- Grill all vegetables until tender.
- Cut the ciabatta bread in half, spread the creamy romesco on both sides
- Arrange the grilled vegetables on top of the bread starting with the eggplant, then red onion and broccolini.
