Quinoa and Farrow with Broccolini

Ingredients

  • 2 oz. Red and white quinoa
  • 2 oz. Farrow
  • 1 tbs. Broccolini
  • 1 tbs. Lemon juice
  • 2 tbs. Olive oil
  • Salt + pepper
  • 3 Cherry tomatoes
  • ½ tbs. Pickled red jalapeno

Preparation

  1. Blanch the quinoa and farrow.
  2. Blanch the broccolini, slice the stem and cut the top in small pieces.
  3. Cut the cherry tomatoes in half, slice the pickled red jalapeno, slice the scallion.
  4. Add together all vegetables, season with the lemon juice, olive oil, julienne of cilantro and mint, salt and pepper.
