Pepper, Eggplant + Almond Yogurt

Piquillo pepper

Smoked Paprika

Preparation
- Peel the eggplant and cut in dices.
- Sauté with olive oil, salt and pepper until soft.
- Season with smoked paprika and reserve.
- Dice the piquillo pepper and add to the eggplant mix.
- Arrange the eggplant mix in the glass, top with the Greek yogurt and then decorate with the toasted almonds and chopped chives.
