Pepper, Eggplant + Almond Yogurt

Ingredients

  • 3 oz. Greek yogurt
  • 2 oz. Eggplant
  • 1 oz. Piquillo pepper
  • 1 tbs. Toasted almond
  • Chopped chives
  • Smoked Paprika
  • Olive oil
  • Salt + pepper

Preparation

  1. Peel the eggplant and cut in dices.
  2. Sauté with olive oil, salt and pepper until soft.
  3. Season with smoked paprika and reserve.
  4. Dice the piquillo pepper and add to the eggplant mix.
  5. Arrange the eggplant mix in the glass, top with the Greek yogurt and then decorate with the toasted almonds and chopped chives.
