Mediterranean Salad

Kalamata olives

Green beans

Cherry tomatoes

Red + yellow peppers

Basil leaves

Fennel vinaigrette

Sherry vinegar

Olive oil

Salt + Pepper

Microplaned lemon zest

Preparation
- Slice the olives and cherry tomatoes in half.
- Clean the green beans and blanch.
- Cut the red and yellow peppers in batonnets.
- Slice the celery stalks to ⅓”. Keep the leaves for garnish.
- Add the sherry vinegar to the olive oil, salt, pepper, diced red onion for the vinaigrette.
- Arrange all vegetables on the plate, dress the salad with the vinaigrette, finish with chopped basil and microplaned lemon zest.
