Mediterranean Salad

Ingredients

  • 4 pc. Kalamata olives
  • ½ oz. Green beans
  • 4 pc. Cherry tomatoes
  • 1 oz. Red + yellow peppers
  • ½ oz. Cucumber
  • ½ oz. Celery
  • 2 Basil leaves
  • ½ oz. Fennel vinaigrette
  • 1 tbs. Sherry vinegar
  • 2 tbs. Olive oil
  • Salt + Pepper
  • Microplaned lemon zest
  • ½ tbs. Diced Red Onion

Preparation

  1. Slice the olives and cherry tomatoes in half.
  2. Clean the green beans and blanch.
  3. Cut the red and yellow peppers in batonnets.
  4. Slice the celery stalks to ⅓”. Keep the leaves for garnish.
  5. Add the sherry vinegar to the olive oil, salt, pepper, diced red onion for the vinaigrette.
  6. Arrange all vegetables on the plate, dress the salad with the vinaigrette, finish with chopped basil and microplaned lemon zest.
