Roasted Cauliflower Salad

Piquillo peppers

Spice mix: coriander, cumin, brown sugar, cayenne

Olive oil

Lemon juice

Salt + pepper
Preparation
- Season the cauliflower florets with the spice mix and olive oil.
- Roast the cauliflower at 375°F until tender.
- Assemble the salad with the cauliflower, diced piquillo peppers, raisins and kale
Make vinaigrette with olive oil, lemon juice, salt and pepper.
