Roasted Cauliflower Salad

Ingredients

  • 4 oz. Cauliflower
  • ½ oz. Piquillo peppers
  • ½ oz. Raisins
  • 1 oz. Kale
  • Spice mix: coriander, cumin, brown sugar, cayenne
  • 2 tbs. Olive oil
  • 1 tbs. Lemon juice
  • Salt + pepper

Preparation

  1. Season the cauliflower florets with the spice mix and olive oil.
  2. Roast the cauliflower at 375°F until tender.
  3. Assemble the salad with the cauliflower, diced piquillo peppers, raisins and kale Make vinaigrette with olive oil, lemon juice, salt and pepper.
