Hummus + Grilled Veggie Flatbread

Hummus

Piquillo peppers

Garlic clove

Red pepper

Asparagus

Broccolini

¼ pc.
Fennel

2 pc.
Sliced eggplant

Olive oil

Lemon juice
Preparation
- Marinate all vegetables with olive oil, salt and pepper.
- Grill until cooked.
- Dice all vegetables and reserve.
- Mix in a blender the hummus, garlic, lemon juice, olive oil and piquillo pepper until smooth.
- Season to taste.
- Spread the hummus mix on the flatbread, and display the diced grilled vegetables on top.
- Bake for 5 minutes at 350°F.
