Hummus + Grilled Veggie Flatbread

Ingredients

  • 2 oz. Hummus
  • ½ oz. Piquillo peppers
  • ½ pc. Garlic clove
  • ½ pc. Red pepper
  • 1 pc. Asparagus
  • 1 pc. Broccolini
  • ¼ pc. Fennel
  • 2 pc. Sliced eggplant
  • Olive oil
  • Lemon juice

Preparation

  1. Marinate all vegetables with olive oil, salt and pepper.
  2. Grill until cooked.
  3. Dice all vegetables and reserve.
  4. Mix in a blender the hummus, garlic, lemon juice, olive oil and piquillo pepper until smooth.
  5. Season to taste.
  6. Spread the hummus mix on the flatbread, and display the diced grilled vegetables on top.
  7. Bake for 5 minutes at 350°F.
