Branding & Identity

Our brand is our foundation. It's who we are and it inspires everything we do. It's playful "Canopy" letter forms in our logo. The signature orange. And of course the tagline "Positively yours," which is our Canopy brand promise. The goal is to create a consistent and engaging experience every time someone "meets" Canopy. Each hotel has to do its part to follow brand guidelines.

What is the Minimum requirement of food and drink at Canopy?

Breakfast: Inclusive, artisanal breakfast offering must be offered in Canopy Central or closely associated dining lounge.

Lunch: A minimum lunch offering must be made available to the guest – this may be executed from the Cafè, Bar, or an associated restaurant

Dinner: A minimum dinner offering must be served with table service this may be executed from the Cafè, Bar, or an associated restaurant

If I have anotherrestaurant in the hotel or nearby, can that substitute for the requirements?

All standards must be met for each meal period within Canopy Hotel. The breakfast must be offered free of charge to guests in or near Canopy Central, Cafè or Bar. If needed, the breakfast may be produced in an auxiliary kitchen (partner or not) but still displayed in Canopy’s communal space. The lunch and dinner requirements may be met with substantial menus at associated restaurants in (or connected to) the hotel.

What are the in-room requirements of Canopy food and drink?

Canopy Breakfast in a bag is mandated at all properties. The operational details can be found here. Lunch, dinner, and late night in-Room dining is optional and should be market and demand driven.

London

FERNANDEZ & WELLS

FOXCROFT & GINGER

A laid back all-day dining spot with a serious coffee program, house-made sourdough breads, and a selection of craft sandwiches, salads, and small plates. F&G also has a small, well-priced wine list.

New York

STUMPTOWN COFFEE

Portland's greatest export comes East with a Greenwich Village café offering the chain's full line of sustainably sourced, perfectly roasted coffees, plus pastries from local icons Milk Bar, Ovenly, and Doughnut Plant.

BLUE BOTTLE COFFEE

As with Canopy, each Blue Bottle Coffee café is uniquely designed as a tribute to its neighborhood. You'll find their legendary coffee at a sleek shop near Rockefeller Center, a shaded nook on the High Line, and converted loading dock in Chelsea.

San Francisco

COFFEE BAR

These wildly popular shops boast spaces for lounging, locally-sourced food & drink, and "one-of-a-kind indulgences." Beans come from the Bay Area's Mr. Espresso. The Coffee Bar's original Bryant St. location is a Mission District landmark.

THE MILL

A collab from Four Barrel Coffee and Josey Baker Bread. These beans are identified by their aroma and taste: Leutic has a juniper fragrance, tastes of peach and pine. You'll pay $4 for a piece of toast, but it's the best you'll ever have.

Chicago

INTELLIGENTSIA COFFEE

To go to Intelligentsia is to watch as they circle cones of freshly ground, single-origin beans with Japanese kettles, coffee passing drip by drip through the filter, yielding individual cups of coffee whose distinctive flavor profiles are worth waiting for.

GAS LIGHT

The space is quite nice for sipping a cup of pour-over coffee, made from beans roasted in-house or from a rotating roster of guest roasters. Platters of charcuterie, house-pickled veggies and Marion Street cheeses make for a solid snack.
