The open concept means our food + drink options are always on display. We present items honestly and invitingly, just as an artisanal bakery or elegant market would.

Canopy hotels are open to the street and the surrounding community. As the street lamp of the neighborhood, Canopy is nestled comfortably within the environment, evoking the feeling of reliability for locals and a sense of home for visitors.

Introduction

The classic model of three square meals doesn’t always work for modern schedules. Instead, we offer a thoughtful core menu that evolves throughout the day to meet the demands of our guests.

Our menu offerings encourage grazing at any hour, whether it’s during work, rest, or play. The emphasis is on positive, healthful eating with simple service in a casual atmosphere.

The public spaces are welcoming and adaptable. Instead of relying on a traditional hotel prototype model, we let each location’s available space and surroundings determine the best design and programming.

Eat, Drink, Smile

The menu is all about fresh, quality products that aim to utilize local and seasonal ingredients. A blend of healthy choices with locally-inspired savory and indulgent, sweet options appeal to the modern traveler.

Morning | Breakfast

Our signature breakfast with select items like breakfast pizza, baked goods, fresh fruit and yogurt is a key element of our Positive Stay promise. Rather than cooking to order, all items are artfully displayed for guests to help themselves. Part of creating a truly welcoming atmosphere is providing a daily delicious breakfast for our guests.

Afternoon | All Day

Everything revolves around a central oven with made-to-order items like flat breads and baked quiches, along with items like pastries, sandwiches and salads. Guests order at the counter for takeaway or self-service in the café. The bar provides day-long-refreshment with juices, a focused wine list, craft beers and signatures cocktails.

Evening | Dinner

Simple and flavorful small plates are on the menu at the bar and available through table service. The food is served as late as the bar is open and the small plates allow for sharing and enjoying the selection of dishes.

Canopy is a new kind of hotel, with surprises at every turn – think hand-filled tea sachets or the little "something extra" slipped into a take-away bag. Good Design, Good Service

The public spaces are welcoming and adaptable to all the needs of our guests. Instead of relying on one standard prototype, location and surrounding drives design and environment decisions. What all Canopy hotels do have in common are open, glowing spaces, abundant natural light and simple inspirations that take its cues from the neighborhood.

Environment Inspiration

Natural materials: dark oak, burlap, wood tables to create a contemporary atmosphere with personality. Rustic-modern dining spaces and cohesive synergies between indoor and outdoor zones.

Exposed ceilings, brick, neutral materials, and subdued colors create spaces that feel intimate, yet airy and expansive.

Functional seating clusters and simple tables with humble moments of greenery and herbs that exude a welcoming atmosphere and encourage convivial eating with good company.

Interior and exterior spaces should always be inspired by local surroundings. Each neighborhood’s available space and neighbors help determine programming and design. Art and finishes connect guests to the surrounding area’s history and culture.

Surprising Extras

Canopy service is defined by simple details that make all the difference. When Enthusiasts see an opportunity to surprise a guest, they know their attention will be appreciated.

Breakfast Delivered In a Bag

At Canopy, we’ve got a morning room service surprise: a breakfast in a bag, filled with juice, yogurt and fruit. Simply mark your preference on the in-room bag and hang outside your door before falling asleep for the night. Wake up, grab the filled bag hanging on the hook outside the door, and kick-off a beautiful morning.

Today’s Smoothie Yesterday’s Fruit

It’s a shame to waste yesterday’s fruit when it’s still delicious and healthy. So we drop the berries, apples, or pears in the blender and make today’s breakfast smoothie.

Hand-Filled Tea Sachet

Canopy adds a new twist to the tea ceremony with personalized tea sachets, one hand-filled for enjoying in the moment, another, brought to the guest as a lovely surprise for future enjoyment.

Delightfully Surprising Extras

Guests expect the Summer Quiche to be savory, the BBQ sandwich to be spicy. What they don’t expect are the extra sides or small sweets passed along, just because.

Freshly-Picked Herbs

We give new meaning to the word “local” by finishing dishes with just-snipped herbs harvested from the our very own Canopy garden.

Specialty Coffee with a Treat

In this rush rush world, sitting down and enjoying a caramel macchiato lets us slow down if only for 5 minutes. Reward guests’ patience with a sweet treat as gratitude for hanging with us.

Surprisingly Refined Bar Snacks

Sometimes, a guest deserves more than the usual bar snack. A grueling day, an act of kindness, a certain look...that’s when the unexpected chocolate covered, sea salt dusted citrus snack is offered and gratefully accepted.

Hot Cocoa + Toasted Marshmallow

Hot Cocoa evokes happy childhood memories. Canopy takes pride in offering a special baked hot cocoa topped with toasted marshmallow—an indulgent and cozy treat for our guests to enjoy.

Locally Inspired, Nightly Tastings

Evening we invite guests, enthusiasts, and our neighbors to explore something new. For 1 hour each night, the Lead Food & Drink Enthusiasts hosts a tasting showing off a sample of local wine, beer or spirits. Because we want to help start a conversation—and you can never stop learning.

Our Mission

We are a team of restaurant professionals that exists for the purpose of developing restaurant and bar solutions that will excite and attract both local clientele and hotel guests. We aim to be on trend with the evolving needs of our guests, cultural changes in dining, and the development of innovative and relevant Food and Beverage concepts. We are delighted to present Canopy—a flexible concept that addresses guest satisfaction and operational synergies.
